I think I figured this out. For each form, inside the SETTINGS tab, there is an EMAIL tab. There, I can select the form field for the sender’s email and save the form. This is a terrific plugin. Thank you very much.
Never mind. I created a test campaign scheduled to send to a 2-person test list. Scheduling worked fine without requiring me to be logged in to WP.
