I thought it might be the theme but unfortunately the company has closed and no longer offers support.
Update: yes the first custom CSS worked perfectly, without ‘important’ – great!

To add a GDPR compliance field, I added a ‘checkbox’ field, changed the label to GDPR Agreement, set to ‘required’, added 1-2 option boxes and added the relevant text to the option box (for example, I have read, understood and agree to the terms and conditions)
was actually very straightforward and looks perfectly fine.
