I’m not sure what might cause an infinite loop with Bedrock, as long as the WP_CONTENT_DIR and path to the “app/themes/” folder are both resolving correctly.

This early plugin version has not yet been tested with FSE, Bedrock or page builders.
live-auto-refresh.php line sets the WP_CONTENT_DIR, but then looks for /wp-content/themes/ for the theme files, so this is likely why it is failing with your non-standard folder structure.
If you wish to edit the plugin directly and get it working, send me the changes and I will release an updated version.
Changes to files within the active theme folder, or saves of content should trigger an automatic browser refresh.
Are you using a child theme, or a page builder?
This plugin is for developer use during theme coding, so not intended for this use.
