Anyone else is looking for this solution.

Locate public_html/wp-content/plugins/easy-table/themes/default/style.css file

4th line from the bottom:

.easy-table tbody tr:hover td,.easy-table tbody tr:hover th{background-color:#e9eff5;}

just edit the color code and you’re done
