I have update woocommerce (from Version 2.0.20 to 2.1.5), and now the Jetpack Galleries work fine also in Safari.
Maybe it was a conflict with the old Woocommerce Lightbox javascript.

I think that Canvas theme don’t support Post Format… 🙁
