Power of post, I solved this (or at least worked around it).
Under advanced settings, I changed Timezone from “source default” to “site default” (which should have been the same, UTC-5). Interestingly, when I did this, the dates show up correctly, but my week start goes funky.
The “week starts on” = “site default” now works fine. But setting “week starts on” manually results in shift-1. So setting it manually to Monday results in week start of Sunday. Something is definitely being shifted +1/-1 somewhere.
But my particular issue is resolved.

To add, I changed “week starts on” manually to Monday (instead of site default, which is also Monday), and the display does start on Monday, but the dates are still shifted +1 (so Nov 1 is still showing as Monday).
