I can’t see an Add to Cart button on page you linked to. Is the plugin activated?
Changing the link destination of the Book an Appointment button is beyond the scope of this plugin.

That issue shouldn’t affect this product. It’s a single-level variation that has only ever been synced from Square to WC.

You can do this by unsetting the gateway for a certain role.
