No it seems that is has nothing to do with other plugins, now I see that variable products have this option for all variations but not in general.
So I have a new question: If it is a simple product, I can customize the “Out of stock” message, and it shows in the list of products. But for a variable product, even if I change it for all variations, it simply shows the original text in the product list.
Let me suggest an update that if I manage a variable product’s stock at product level, also the custom texts could be managed in the inventory tab.
