The error finally showed up in my site health report (using dreamhost, for some reason error logs are not enabled in my wp-config and I haven’t been able edit it). This is what my site health report shows:
When testing the REST API, an error was encountered:

REST API Response: (http_request_failed) cURL error 28: Operation timed out after 10001 milliseconds with 0 bytes received
I will try to get error logging turned on to have a better look at what’s happening.
