it really depends what the root problem is. If you need to replace the whole theme, then yes. If the problem is with a particular file, and you know which file, edit that file and upload it.
Filezilla knows when you make changes to a file and will upload to the correct path.
The authors name is in the style.css for that particular theme.

I think I will use your original suggestion (that I shot down 🙂 ) and build a virtual machine and put xampp on it.
My original question remains ‘What would I need to change when I move to it to production?’
