There are three settings, no image, first image from the content and custom field.
This is the plugin http://wordpress.org/support/plugin/gd-star-rating. I don’t know why they removed it, three days ago it was there and had millions of downloads…
Anyway I probably will be looking for another rating plugin.

I was quick to judge. I am sorry. Its GD’s problem as it omits (from my understanding) the first underscore.
GD Star Rating gives you a list with the custom fields and I get only “video_thumbnail” without the underscore.
Anyway, its not Video Thumbnails problem. Thank you very much for your quick reply.
