Confirmed fixed in 8.7.4 on our production site: no more identical _stock writes on bundle views, the audit log is quiet. Thank you for the quick turnaround, marking this resolved.

Confirmed fixed with 8.7.2 on our side: the pages that returned 500 on 8.7.0/8.7.1 render fine and GET /wc/v3/products is back to normal. Thanks for the quick turnaround and for covering get_stock_quantity() and get_backorders() too.
