Sorry, you’ll also see here: https://becadvice.com.au/about/bec-specialists/ – that any new post I make, regardless of having selected the post category ‘Specialists’ in Post Grid, displays here. So it’s just displaying every post, and only including the last 8 as I turned off pagination and the ability to go to the next.

Not entirely. I turned off Pagination, so it’s displaying the max of 8, and not allowing people to go to the second page. If I turned it back on, it would display all of the posts.

Whereby I’ve added a plug-in to allow me to categorise pages. I’ve categorised 5 pages as ‘Workshops’. I select this ‘Workshops’ category only, in Post Grid for the query, but it shows every page.
