Is there a way to show Last Modified on Google search SERPs even if the original date stays on the post itself?
It seems that you are using Yoast SEO Plugin. To achieve what you want, please enable Compatibility mode from Schema tab.

Yes you are right. There is a problem with WordPress version less than 4.9.0. I am going to release v1.7.3 very soon. This issue will be fixed in the next release.

Actually this plugin was rewritten from scratch in v1.7.0. There may be some issues with the older version of wordpress but I haven’t tested it. But, I will test it with WP v4.8 and inform you soon.

Custom taxonomies (not in-built in WordPress) attached to any post types does not work in Free Version. It is a Premium Version Feature. If you are interested, you can start 7 days trial to check if it is working or not for your case.
