You should be able to configure the status after payment is received in the payment methods options.
Go to WooCommerce -> Settings > Checkout > Paymethod of choice (e.g. iDeal). the last option on the screen should be to set this.
If this isnt the case, you can try to obtain the latest release from our github page manually and see if that version fixes the issue for you:
https://github.com/idealplugins/woocommerce/releases/latest

Your customers in Belgium will most likely not use iDeal, but they might use Bancontact (mr cash) which is also supported in the plugin.
You should be able to create an account with TargetPay and collect these payments.
