Thanks, I didn’t know about categories and how they differed from tags. Digging into the categories, it looks like I could use the Network Shared Posts plugin:
http://wordpress.org/plugins/network-shared-posts/faq/
post everything to z.com, with appropriate categories. Then x.com and y.com can filter off of the appropriate categories.
Then, using domain mapping
http://wordpress.org/plugins/wordpress-mu-domain-mapping/
I should be able to map unique domains to each site instead of x.base.com, y.base.com, z.base.com.
