Thanks James, that was enough of a prompt for me to investigate the Theme (Modernize). Turns out there is an issue with incomplete/corrupt file uploads messing up the Page Options selection on the Theme.
Updated to latest version – solved issue. Sometimes the easiest things are the first things you should try!
