Thank you for the answer. I made some more tests.

Verify product variations: Make sure all combinations of the attributes (“Menu” × “Jour de préparation”) exist as variations in this product. Sometimes, missing combinations cause all options to show instead of being filtered. – I am not sure to understand. All the combination should not exist. I prepare 1 menu on 1 day. Every 4 weeks, I add some more date in the « Jour de préparation » attribute and than I add a new variation with the same menu and a new date. I was having a lot of unused attributes and inactived variations. I deleted all the unsued attributes and the inactive variations in my product and all the 12 variations has some inventory and the filter work fine now (https://calcul-zone.com/produit/dominique-prepare-ton-lunch/)

BUT

Other products: Does the issue happen with other variable products as well, or only with this one? – I have this other product (https://calcul-zone.com/produit/lunchs-congeles-prets-a-manger/) that still does not work properly. I made sure all the variations are « activated » but there are some of them with 0 in the inventory. This is the only difference with the first product. I have a lot of variations in this product. Do I really need to delete them when they have there inventory at 0 and recreate them when I do have stock? I would prefer not to… It is a lot of work. Furthermore, I have this test product (https://calcul-zone.com/produit/test-filtre/) I messed with it the same way (delete attribute, add attribute, inactive variation, variation with no inventory, variation with missing attribute) and he is still working fine. I am unaible to reproduce the problem.

Since I have products that are working, I think point 2 and 4 are irrelevant.
