You may change the text by editing the translation of the Hotel Booking plugin. Thus you may use the Loco Translate plugin to edit/add translation (the language that is selected in the Settings of your WordPress site) and use search to find the proper strings to edit/add your custom translation.

Unfortunately, the Hotel Booking plugin is not compatible with the Polylang plugin since it is not redirecting to the translated system page automatically. Thus we recommend using WPML instead. Hotel Booking works correctly with WPML.Forum: Plugins

Thanks for your further question. You need to remove the time slot manually or schedule a special event with a third-party plugin to switch it to draft automatically if you need to add a one-time event to the timetable.Forum: Plugins
