I was able to post on 12/28 and it auto-posted to LinkedIn, but on 12/29 it didn’t work, I tried to reauthorize the token and try again, and then received an error “Accessing the resource is forbidden. Please check your permissions for this resource.”

As long as it is still a MySQL server (per “it installs MySQL automatically” ) you can use phpMyAdmin. It is just an interface that connects to an instance of MySQL.
