Aaaand… yes. I confirm that was the problem and now it is solved.

I think I understood what’s the problem: it’s caused by the caching of the host service, in fact if I delete the blog’s cache, the cart updates successfully (kind of: I have to add to the cart the items, and change the products’ quantity as I want them, then delete the cache and refresh the cart’s page, and it gets shown correctly).
Now I have tried to disable the caching from the WordPress panel, but it says that it can take up to 3 hours to get disabled, so I will post an update when the 3 hours are passed.
Hi, I’m having the exact same problem.
I am using as shortcode the one provided in the plugin’s settings page ([show_wp_shopping_cart]).
My WordPress version is 5.4.1 and I’m using as theme Relia.
