I’ll reply to my oen question with the good answer to leave it here for other people 😀
In the new block editing mode of wordpress there is a sidebar on the right. There is a “set featured image” button on that sidebar. But sometimes the sidebar isn’t shown at all or it is scrolled down. That’s why I missed it in the first few attempts
