I found a configuration option that resolved this issue:
Postman SMTP Setup > Show All Settings > Message tab > Validation > Disable e-mail validation
It worked like a charm! Thank you!

It is also clear that the most updated version of the plugin, one available as of this post, is still having the same issue.
