FWIW I was able to get it working by doing two things:
First, I put this nginx.conf file in front of the instance. Secondly, I symlinked the a subdirectory to the parent directory, which I guess would be similar to a subdirectory install, but one without any kind of separate root install: ln -sT /var/www/html/ /var/www/html/blog.
