At the moment, taxes can only be added through WooCommerce at the moment. We do have a plan to implement it through Amelia as well, but there is no ETA on this.

Can you please let us know which version of the Amelia plugin you have installed on your website?

For that purpose, you need to disable the “Use service duration for booking a time slot” option on the Amelia/Settings/General page.
Also, we would suggest that you set the “Default Time Slot Step” option to 1 hour and it will work fine for your purposes.

It could be that you added the admin’s email to the “Send all notifications to additional addresses” on the Amelia/Settings/Notifications page.
If you did, you an remove it from there and it should work as you intended.
