Maybe it is a problem with a plugin cache (sorry for my bad english).
I had a similar issue with WP Super Cache, I have desactivated this and it was OK.

In order to move “From WordPress” in the email author, i have done this in Contact Form shield (mail 2 / “from” shield) :
You <emailexample@gmail.com>
You –> it’s the name that you what to display it (your blog title for example) ;
<emailexample@gmail.com> –> it’s the mail that you want to use (as your email blog).
It’s work for me 🙂
