Figured it out, had nothing to do with the plugin. The pages had LOTS of content and it turns out a configuration change in php.ini fixed it since I was exceeding the maximum number of input vars. Added max_input_vars = 10000; to my php.ini, restarted, and the issue was solved. Wanted to repost this just in case anyone may find themselves in a similar circumstance.
