I have managed to answer the question myself.
Apparently, we can’t have more than seven menus up top. As soon as we do, we have this issue. If I add the new FAQ as a submenu, no problem.
That’s a pity as we really wanted it up top but at least we know the issue now.

I have reverted to a backup as I could not leave the site like that.
If anybody has any ideas as to why this happened, though, it would be very helpful as it is happening again as soon as I try to add the FAQ page back to the main (header) menu. 🙁
