In order to improve compatibility with as many email servers as possible, the plugin draws the From address from your general WordPress settings. You’ll find this under Settings > General, where you set your site name and tagline.
Check to make sure the email doesn’t appear there. If it doesn’t, then there may be some other code that is overriding your general admin email setting. I’d suggest deactivating all other plugins and switching to a default theme, then testing to see if you still receive that in the From email.
If so, there may be a problem at the server level. I’d recommend contacting your web hosts to see if they can explain why emails are being sent with that From address.
If you need to force a different email address in the From header of the emails for this plugin, you can use this tiny little addon:

To use it, click the Download button at the top, unpack the .zip file and then open the .php file in a text editor. Modify the email address at the bottom to match what you’d like the From address to be. Then save the .php file, upload it to your /wp-content/plugins/ directory, and you can activate it from the Plugins list in your WordPress admin area.
I’d recommend you only follow this course of action after you’ve tried the other steps in the email. If emails are getting sent out with email@hotmail.com, that email is coming from somewhere and may be effecting other emails that WordPress sends out. So it’s best to discover the source of the issue and resolve it there.

I’d like to use your little addon for change the email of the “From header”.
I install the “rtb-override-notification-from-email.php” but it don’t work for me.
Before i upload it i change the email adress on line 32.
But when i install it in backoffice it indicate a new version, i push on update version.
Is it still relevant ?

I answer to myself,
after some tests it works if you don’t apply the purpose update of the override in the extensions page.
Need to modify (or not, your choice) your address email in the php files override (before or after upload don’t matter).
