Website disappears every 30 days…helllp

I help admin a small business website, with limited IT support. We host on our own server. I use UpDraft Plus as a backup plugin. About 6 months ago, our IT guy updated PHP manually on his server config. This caused website to crash and disappear, which I then restored using UpDraft. Since then, the site goes down every 30 days or so, until I restore with UpDraft. Frustrating as my IT guy doesn’t seem to know what’s causing it, and I have only basic WordPress design skills. I have the latest restore log available- can anyone help me understand how to stop this from happening? TIA.
