Just wanted to add a few more things if it helps.
– The send email to user field is selected
– I’ve inserted the email from email address ensuring there are no spaces at the end
– multiple users have filled in the forms already from around the country using different email domains and none of them are receiving the emails
– We have checked junk/spam folders etc.

I haven’t been able to reproduce this on my end. Could you let me know what version of Ninja Forms and WordPress you are currently running?
Hi Kevin, I’m using WordPress Version and Ninja Forms 2.0.1
Make sure that the email address has both boxes checked: “this is an email address” and “send a copy of the email to this address.”
