If you get stuck at some point you may consider going for a clean installation after removing the old one completely.

As you want to save the products and all previous things, uninstalling WooCommerce is not the solution. You need to go for updating the existing one.
Please note that as you’ll be updating from a rather old WooCommerce version, I would recommend taking a full site backup before the update. You can use UpdraftPlus for backups.

Just looping back here to share a guide for uninstalling WooCommerce.
Normally, when you uninstall WooCommerce, only the plugin is deleted but your data (orders, products, etc.) and settings remain in a database, unless an additional step is taken to delete all of that. You can refer to this guide in this regard.
Therefore once you’ve taken a full backup you can go for a fresh installation.
