yes you can delete them
if you have done the image optimization , I would suggest to revert the optimization before your delete the tables about the image optm
there is also some rows in wp_options starts with litespeed. can be deleted as well
and if it’s not much trouble , may I know any particular reason you uninstall it ? anything we can improve ?

Do I need to reinstall the plugin to check if the previous developer used it?
Your plugin seems to work really well on most servers, unfortunately not in my case.

yes, you will need to reinstall the plugin assuming you have not deleted these tables yet
go to Image Optm page , click “destroy all optimized data”
