I have a similar 500 errors on some AMP pages (76 posts in fact), but not for all AMP pages, and not all the time, very strange 🙁
Since the first error in Web Master tool, I tried to desactivate plugins thanks to your AMP Plugin Manager, but no effect…

Hi Cedric,
The guys from AMP for WP have already helped fix this and in my case the error was coming from the Schema plugin and NOT AMP for WP.
The developer for the Schema plugin has applied a fix to his plugin but the main difference for you would be that I only had two errors.
Both of those errors were from the Schema plugin handling of schema for About pages and Contact pages.
