Custom fields such as fields added by the Form Field Manager and built-in hidden fields are scoped to the specific form and that means that those custom fields only exist as data for that form and will show for the donation view.
These fields will not be included in a global export because not all forms will have this field. To export custom fields – you’ll just need to select the form specifically and then choose the custom fields to be included in the export.

For context, GiveWP saves data in the WordPress Database, and exporting from there is a fairly processor-intensive thing. That’s not a problem when you know exactly what data to look for, but it becomes a problem when you are having to account for any type of data that anyone can be adding to the database. Even with just 5 or 10 additional points of data, the query involved quickly becomes unwieldy and unnecessarily complex, leading sites on smaller or underpowered servers with sites crashing.
