Till today, stock minus still happened.
Can you explain with screenshots because this is not clear. If you mean stock reduction is not happening, see what status your orders have and ensure they have ‘order notes’ stating stock was reduced!

No that looks ok.
I’m not sure what else to suggest. On my test installs, stock won’t go below 0 because the cart page validates them.
