Based on your requirements, you may want to look into an extension or plugin for that feature, since out of the box WooCommerce provides a generalized basic inventory management solution. These are my recommendations:

Do you know what the default settings are? Like right now I have everything set to monthly. Does it replenish the stock at the beginning of the month or end? Or does it do it based on when I created the product?

The core WooCommerce plugin does not have a stock replenish feature. You only add stock in the Product data → Inventory tab and this stock is deducted with each sale till it’s exhausted.

Thus, the stock replenishment settings are coming from another tool that you’re using on your site. I would recommend finding the plugin adding that option and reaching out to its developers for further assistance.

Oh! Okay. I see now.
So there’s no way I can have it reset every month, on the first of the month? Where does it determine when to replenish the products? That’s my question really haha. Like how do I set a custom time for it?

As indicated previously the free WooCommerce plugin itself does not replenish stock as you have described. If you’re using a third-party plugin to automatically replenish stock on your site you’d have to reach out to the company who create the plugin you’re using.
They should be able to offer guidance if their stock replenishment software/plugin for WooCommerce can be configured to do that on a specific day of a month.
