In the first place, you can create multiple email notifications, depending on logic: https://wpmudev.com/docs/wpmu-dev-plugins/forminator/#email-notifications-forms, and each of those emails can contain different data.
As for emails, you can control where sends those email via Recipients https://wpmudev.com/docs/wpmu-dev-plugins/forminator/#receipients-tab

THank you! What i need is a dynamic tag to sent the form/email to the post author and set reply to the logged in user that filled the form, and i didn’t find any info on the links you have shared or i missed it. Can this be done please?

The form doesn’t have a setting to automatically pick the Post Author email. What you could do is add a select field with the emails of the Post Author. So that the Author could be chosen during the form fillup.
You can then send multiple emails based on the values selected by adding the Select Field in the “Recipient” tab and by using Conditions.

You should find that option in the Email notification by adding the Email Field of the logged in user:
