This is intended. The button will be hidden in case that you have set a specific sort setting from “NextGen Gallery -> Other Options -> Image Options -> What’s the default sorting method?”
To bring the button back, you will have to select “Custom” for the specified global setting.

I selected Custom sorting method, and now the Sort Gallery button is available.
Unfortunately the direction Ascending/Descending is not working properly.
“Update sort Order” works fine but after “Back To Gallery” the sorting is lost.

Just to confirm it, can you please let us know if you are pressing “Insert Gallery” then “Publishing” the page after changing the sort order?
Also, can you please let us know what gallery display type are you using?

The problem is not really in inserting galleries.
It occurs when viewing images in the Manage Gallery page:
nggallery-manage-gallery&mode=edit.
I have a very large gallery that has not yet been published its entirety, I have only published the images one by one.
Update Sort Order works fine, but when I click in Back to Gallery the sorting is lost.

When you click on “Update Sort Order”.
Are you able to see the message “Sort order changed”?
Here is a screenshot of that message.
We just made a quick test and we haven’t been able to replicate the problem.
Also, checking those shortcodes. Some of them are a bit older. It will be great if you can re-insert them and check again.
If the problem persists, you probably need to check for conflicts.
– Temporarily deactivate all your plugins except NextGen Gallery.
– Is the problem solved? Then, it was caused by one of your plugins. Please check one by one and find the one causing the problem.
– If the problem is not solved with the deactivation of the plugins, try changing to a standard WordPress theme, it could be a conflict with your current theme.
A full website backup is recommended.

but Unsorted and Ascending are now in Bold style, although I have sorted by ID, DESC.

– Temporarily deactivate all your plugins except NextGen Gallery.
