In my opinion these options work best:
Configure Google Recaptcha. Or set up Akismet.
As far as i know there is no quick fix for this.
CF7 5.1.+ updated to reCAPTCHA v3.\
You can use Contact Form 7 – reCaptcha v2 in addition to Contact Form 7. Once installed and configured it offers the same reCaptcha functionality you are used to in previous versions of Contact Form 7 (recommended by CF7 plugin author).

Thank you—I just installed v2 and added the [recaptcha] tag but it’s not showing up. Wonder if I should disable the up-to-date CF and only enable the v2 one?
Check you followed the instructions at Contact Form 7 – reCaptcha v2 – it does have a couple of specfic steps.
Running an older version of CF7 is always not a good idea – for security reasons.

Thank you, Neil (and preetinder). I think I found a workaround because neither of those options were working as effectively as I’d hoped. I spent last week trying different things and what I did was create a required checkbox that says “I’m not a robot.” It’s brought my spam email count down to zero for 2 days now.
Hopefully, anyone else having the same problem can read this and try the same thing!
