Shipping rate for "All countries except"

This plugin is awesome and I’m so glad I found it, thank you!

I have a feature request, which is the ability to choose “all countries except” as a country choice. I have rates set up for US, Canada, Mexico, and Australia, and want to also ship anywhere else using a different rate. I initially thought that if I did that last configuration using the “all allowed countries” option, that it would work as a “all countries that do not have a configuration set”, but instead it is being listed together with the other options for countries that have individual rates.

So, if you could do an “all countries except” or “all other countries” option, that would solve my problem. Right now I am going to have to select a ton of countries to get the setup I’m trying to do.
