Setting Up Goal Tracking

I am baffled by this. I’ve been reading for several hours now and still can’t figure out how to set this up correctly. I need my form submissions to register in analytics. And if I can’t find someone to hold my hand through this, I’m just going to go back to tracking thank you pages. Any step by step help would be appreciated.
