Set maximum quota on variables

Hi there,
I’m using this extra fields plugin for event submission purposes. I would like visitors to choose a specific workshop, they can choose for either workshop 1 up to 5. Moreover, I would like to put a maximum on users choosing for a particular workshop, for instance 100 seats par workshop.
To tackle this I can make a script myself counting the particular rows in mysql, but does anyone know whether I can instruct cimy extra user fields to hide the dropdown menu in the profile area, so that when the maximum is exceeded, a user cannot choose that particular option anymore, up until someone else chooses another one and a seat can come available again.
Long story, hope someone understands and has ideas?
