Contact Form 7 doesn’t send email with the hosting server address since it doesn’t know what is the hosting server address.
To set From address, see Setting Up Mail.
By default, the WordPress mailer fills in the From: field with wordpress@yourdomain.com and the From: name as WordPress. This may happen if you don’t add an email address in the From: field in the mail section of the CF7 interface.
You should supply a valid email address in this field to avoid Email Authenticaton and Spam Filtering issues – See Contact Form 7 Email Issues – Ensure proper return address is used.

I inserted an email address in the [your-email] Mail section. Messages are being sent properly with that address.
It is still puzzling that before doing that, wordpress@yourdomain.com was not used by WP emailer as from data, but rather the server-name@hosting_company.com was used. Nor was the From: name showing as WordPress used by the mailer. I am wondering if its possible to retrieve form data that was sent with the server

This is most likely due to how your WP hosting handles emails. If you are still interested you should contact your hosting provider.
