Please go to the Ultimate member -> Member directories -> your directory and check that you have “Enable Search feature ” checked.
You can also try to do a conflict test so we can rule out conflicts with your theme or other plugins and see if this issue goes away. Here is the doc on how to do a conflict test if you are not sure how to do it.

I think it was an issue related to “user roles that can search”
Another question – how can I display the search results as listing in a table (ie with all the fields data showing in a row under headers) rather than in blocks. I don’t want the user to have to select the listing to then view the relevant details of the user.

I’m afraid, it’s not possible to display search results as a table.
This would require some customization of the search template. If you really need this feature I suggest hiring a developer for assistance.
