Removing / retiring a product

A product lifecycle normally equals – creation, sale, retiring.
When a product needs to be retired – ie: removed from the available products to be sold – it is necessary that we do not delete the product.
Why ? Because this will remove it from client purchase history, which needs to be preserved in my case.How can I retire products which can no longer be sold without deleting the product from the system ?
