remove customer details from vendor

i followed the help here:

i removed all customer capabilities. but still – in the order email the vendor gets – the name of the customer appear on top…
How do i prevent from a vendor to see any personal data (email, name, address) of the customers, but still to be able to manage and see the orders details.
please assist.
