One way to achieve this is through CSS. You could try adding this to your Customizer → Additional CSS:

a.button.product_type_simple.add_to_cart_button.ajax_add_to_cart {
    display: none;
}

The alternative is through custom coding.

You could check for some inputs from the WooCommerce Facebook group or the #developers channel of the WooCommerce Community Slack.
