In answer to the second question, demur and I are working on functionality that will be released in the near term that will support regenerating thumbnails as well as viewing generated thumbnails in a single location.
For the second part, there is not currently functionality to resize the thumbnails being generated, but that is not scheduled for development in the near term, unfortunately.

Both of the options you described are now available 🙂
If you go to Dashboard -> Settings -> Document Gallery, the changing sizes option is in the General tab and the Thumbnail Management has the thumbnail deletion functionality (after deleting, the thumbnail will be regenerated next time a gallery including the attachment is deleted.
