I could not find a direct way to pull products that have had an update recently, but you can achieve the effect in a roundabout way by using the Handpicked Products WooCommerce block in the widget area. Over there you’ll need to manually select which product(s) has recently been updated.

Alternatively, you can go for a custom coded solution to fetch the recently updated products sorted by time. If you do require help with the coding, I’d recommend hiring a developer or one of the customization experts listed at https://woocommerce.com/customizations/.

Have you checked out plugins like below? You may need to hand pick products, but display them in a carousel.
